Types of white wine

White grape wine is grown in many countries and on different continents, but there are three varietals, labeled as classics. To determine these characters, it is easiest to use three parameters of wine: aromatics, extractivity and acidity. Aromaticity is determined by smell, extractivity is best felt on the tongue, and acidity by observing the work of the salivary glands: the more intensively they perform their action, the higher the level of acidity.

How are white wines made?

How is white wine made? The grape clusters are picked and then go to the winery. On site, the grapes are separated from the stem (de-stemming) and transferred to a special pneumatic press, which is designed to squeeze the juice from the fruit (this is called pressing). White wines are pressed before the fermentation process. Before fermentation, sulfur dioxide is added and the resulting juice is cooled to prevent the juice from fermenting prematurely. The remaining skins and seeds are eliminated from the juice. Yeast is added to the white wine to produce alcohol in the process. Fermentation takes place in vats with a fully controlled temperature, which for white wines is usually between 14 and 18 degrees Celsius. The wine is then clarified and filtered.

How to choose a good white wine?

Distinguishing characteristics are minerality, dryness, acidity and the presence of citrus, tropical and garden fruits, flowers, herbs and spices. The best white wine should first and foremost please, but those who prefer a light taste should reach for those from varietals: Sauvignon Blanc, Gewurztraminer, Pinot Grigio or Garganega. It's also worth checking that they have not been stored in a barrel (such information should be included on the back label). Barrel-aged liquors are characterized by a sharper and heavier aroma. As a last resort, you can always reach for sparkling wine: Champagne, (including up to £200) Cava and, of course, Prosecco.

Aromas and flavors of white wine

Although white wines do not surprise with powerful tannin and deep color - as in the case of red wines, you will find freshness, lightness and richness of citrus aromas. The most common are apple, lemon or lime, and a great deal of tropical fruit: banana, peach, pineapple or melon. Also appearing is cinnamon, which functions as a spice aroma in wines from the Chenin, Gewürztraminer or Petit Manseng varietal. Floral aromas are also present, making the aroma of the wine memorable. Acidity, or the actual level of acids in the wine, is the backbone of white wine. In order for its intensity to be high, it is necessary to harvest grapes that are not fully ripe, yielding wines that are fresh, but not lacking in grape physiology, by the way. Of course, not all fruits of the same variety taste identical. This is directly influenced by the region in which they ripened and the way they were grown. The age of the vines, the type of soil, climate and microclimate, sunshine, precipitation all contribute to the many flavors and aromas in wines of the same type.

What dishes to serve white wine with?

When properly matched with a dish, wine enhances its aroma and adds to its flavor. You have a whole range of varietals and flavors to choose from, so white wines can be used in many ways in the kitchen. Not only with salads and fish, but also with desserts, oriental cuisine or pork.

Chilled white wine goes with almost any dish and is perfect as an aperitif. We can serve dry and semi-dry items with fish, poultry, seafood, pasta, soft cheese or cold snacks. At what temperature to drink white wines?

The unique taste of wine can be affected by many different factors, including the serving temperature. As a rule, white wines should be served at a lower temperature than red wines. Chilled white wines will fully reveal their unique flavor and grape aromas. If you plan to store white wine for a longer period of time, we recommend temperatures in the range of 10-12 degrees Celsius. Aromatic white wines, such as Riesling, require a slightly higher temperature than white Chardonnay and Sauvignon Blanc. Store sparkling wines at 7-10 degrees Celsius.

White wines - price and quality

A cheaper product does not have to differ significantly in quality from a more expensive one. When buying white wine in the store, you should be guided by its structure and aroma. The price depends primarily on the vintage, cultivation method, production costs, maturation potential and awards won.
