What exactly is cava?

It is a wine made in any part of Spain (but much of it comes from Catalonia), and is made from the local white varieties Macabeo, Parellada and Xarel-lo. It comes in white, or rosé versions. Cava is called Spanish champagne for a reason - it is produced using the classic method, that is, it is aged on the lees. Depending on the time that cava wine has spent "on the lees" we distinguish several types of it:

  • Basic Cava - min. 9 months on the lees
  • Cava reserva - min. 15 months on the lees
  • Cava gran reserva - min. 30 months on the lees

Like any sparkling wine, it is subject to a separate classification of dryness level. Depending on the sugar level, you will find designations on the label:

  • Cava brut nature - very dry
  • Cava brut/brut reserve/seco - dry
  • Cava semiseco - semi-dry
  • Cava semidulce - semi-sweet
  • Cava dulce - sweet

How does cava wine taste?

In the glass we should sense fresh aromas of apples, citrus, flowers, as well as a yeasty note. In the case of cava reserva and gran reserva wine, there will be more intense notes of bread crust or yeasty dough. In the rosé version you will also find refreshing notes of currant, raspberry or strawberry.

What to serve cava with?

Like champagne, cava goes well with all kinds of seafood or fish. Because of its crisp acidity, it will break up deep-fried dishes. It goes well with vegetarian dishes and soft cheeses. In short - almost to everything!

At what price to look for a good cava?

First of all - at a lower price than champagne. The global popularity of cava comes precisely from its affordability. A great bottle of young cava can be found for about 40 zlotys already. Reserva and gran reserva will be more expensive - their prices start at about 60-100 zlotys.
