We describe sweetness as a taste that gradates from very dry red wine to very sweet. Dry red wines contain 1-10 g/l , so they are characterized by the least amount of residual sugar, or the total consumption of residual sugar found in the grapes. When choosing a dryred wine, it is worth noting the acidity and the fact that the acid content of grapes decreases as they mature. Thus, vines from cooler climates, where it is more difficult for grapes to ripen in the heat, produce wines with higher acidity. So when looking for dry red wines with lower acidity, it's worth reaching for those from warmer regions.

Styles of dry red wines

If you prefer a light dry red wine, look for one with moderately high acidity, less alcohol, tannins and sweetness. Light red wines are clear in color and are known for their rich, fruity aromas, enhanced by glasses with large spherical bowls. The varietals used in the production of this type of wine are: Gamay (Beaujolais) and Pinot Noir. The largest place where they are grown is France, Pino Noir is also grown extensively in the US.

When looking for heavier dry red wines, choose those with less acidity and more tannins, alcohol and sweetness. Classic dry red wines are called red wines with a moderately massive body. In the category of dry red wine, these are the ones that dominate the market. They are often referred to as gastronomic because they pair well with food. Most classic red wines are dominated by aromas of red fruits, i.e. red currant, cherry, raspberry, plum, red blueberry, cherry, strawberry. There may also be aromas of dark fruits, i.e. blackberry, blueberry, eel plum. The most popular varietals making such wines are: Barbera, Cabernet Franc, Carmenere, Grenache, Merlot, Montepulciano, Negroamaro, Rhône coupage, Sangiovese, Valpolicella, Zinfandel.

In addition to light and classic, there are also so-called powerful dry red wines. Powerful red wines have a high tannin content, a deep ruby color, resulting from their high anthocyanin content; they are also characterized by a rich fruit aroma. Wines this expressive are excellent both solo and with dishes, especially meat dishes. The varietals that make excellent dry red wine are Bordoski coupage, Cabernet Sauvignon, Malbec, Mourvedre, Nebbiolo, Nero D'Avola, Petit Verdodt, Petite Sirah, Pinotage, Syrah, Tempranillo, Touriga Nacional.

Dry red wine production

Dry red wine is distinguished by the following production steps: red grapes are harvested and sorted to remove damaged or unripe fruit and leaves. The grapes are then de-stemmed, and the juice along with the skins is fermented in fermentation vats. After that, the red wine is gently pressed and separated from the pomace (skins, stalks and seeds). The wine is then aged in vats or barrels for some time. The next stage is clarification. After clarification, dry red wines are bottled and released to the market, after an aging period.

Effect of barrel on dry red wine

When choosing a dry red wine, it is worth paying attention to whether the wine was aged in a barrel during the production process, because the barrel has a huge impact on what kind of character the wine has. Thanks to oak, the wine acquires new characteristics, maturation of dry red wine in an oak barrel enriches it with such aromas as, for example: vanilla, cinnamon, coconut, tobacco, resin, orange peel. When the barrel was additionally fired from the inside, the bouquet will be enhanced by aromas of caramel, honey, chocolate, nutty notes, almond, coffee, toast or campfire smoke. Also important to the quality of the wine is the fact that dry red wine that is aged in barrel has the opportunity to breathe. Two types of oak are commonly used in wine production: American and European. Dry red wine that has been aged in American oak will be rich in intense sweet and spicy aromas, e.g. caramel, coconut, vanilla, cinnamon. European oak is the source of less intense aromas for being more subtle and elegant, according to French winemakers.
