Varieties of Chardonnay matured in barrel

Chardonnay variety is even made for aging in an oak barrel. Due to its delicate flavor and its ability to oxidize, under the influence of the barrel it is able to change its face incredibly. After contact with the barrel, Chardonnay wine acquires characteristic notes of butter, mushroom and even notes of caramel, toffee and crème brulle. Product created in this style can be found primarily in California, Chile, Australia, Argentina and Spain.

Chardonnay - appellations and differences

The characteristic bipolarity of Chardonnay can be found in the very cradle of this wine - in French Burgundy. These two production poles of Chardonnay in Burgundy are precisely Chablis and Mersault.

Mersault wines mostly undergo malolactic fermentation (which mellows and rounds out the wines) and a series of treatments, such as battonage (blending the wine with lees) and the aforementioned aging in oak barrels. All this is done to give rich, multidimensional, soft wines.

Unlike Mersault, Chablis rarely undergo "softening" malolactic fermentation and are equally rarely aged in oak barrels. They thus become cold, refreshing, mineral and acidic. The taste of the wine is appreciated by the greatest gourmets of white wines, placing Chablis above the easier-to-appreciate other styles of Chardonnay wine. The preferences of the most discerning palates are also reflected in the price, as a basic Chablis will be bought at the price of a good Chardonnay from warmer regions.

However, wanting to know and understand the wonder of this ambiguous varietal, both in its key characteristics and its wide range of flavor potentials, Chablis cannot be overlooked.

The influence of climate on Chardonnay wine

In a glass of Chardonnay that has matured in a cool climate you will find refreshing aromas of lemon or apple. Such wines will be more mineral, acidic and fresh in the mouth. In warmer climates, the taste of the wine will become heavier, creamy and oily. It will gain flavors of butter and sweeter fruits: melon, carambola, pear, mango or pineapple. The former more refreshing Chardonnay can be found in France in Burgundy, Northern Italy, the coasts of Chile, New Zealand or Western Australia. The latter, rich, heavier, creamy - in California, South Australia, Spain, South Africa, Argentina, or the South of Italy.

Chardonnay variety in champagne

The Chardonnay variety is an important ingredient inmany sparkling wines around the world, including being one of the three main varietals approved for the production of the most popular sparkling wine, Champagne. And while most French champagnes are a blend of Chardonnay, Pinot Meunier and Pinot Noir (marginal Pinot Blanc, Pinot Gris, Arbane and Petit Meslier are also permitted), there are also champagnes made exclusively from the Chardonnay varietal (you'll then find the term blanc de blanc on the label).

Pairing the Chardonnay variety with food - what goes with Chardonnay?

What to drink Chardonnay with? Towering, aromatic, acidic wines that have not been matured in barrel are worth pairing with seafood (shrimp, scallops, shellfish) or fish-based dishes and soft and semi-hard cheeses (including goat cheese). A heavier, oily Chardonnay from California or Australia will be an excellent accompaniment to poultry, or tender meats (turkey, chicken). It can also be served with lamb, to asparagus or accompanied by mature cheeses with a strong, creamy texture.

Chardonnay wine prices

How much does a bottle of Chardonnay cost? Basic wines start at $20, but they do not always reflect the full potential of the Chardonnay varietal. Many regional wines with interesting and developed flavor can be found at prices ranging from 40 zlotys even to over 100. For appellation wines from prestigious regions that represent the full local terroir we will pay a price exceeding 100 zlotys.

Is Chardonnay sweet?

Of course, it happens that Chardonnay wine also occurs in a sweet version. In many wine regions, winemakers leave more residual sugar in their wine so as to satisfy taste buds with a taste for sweeter flavors. Such wines are then worth pairing with desserts or a board of blue cheese.

With a delicate sweetness but also an extremely balanced balance, semi-dry wines can also be an excellent choice. Devoid of high acidity, but also not dominated by sweet notes, they will prove to be an excellent partner for many universal occasions.
