About CHOYA company, company history and philosophy

CHOYA was founded by the Kondo family in 1914 and initially focused on viticulture. In 1959, the company decided to start producing Umeshu. Today, CHOYA is the largest producer of Umeshu in the world while its mission is to produce and promote the best Umeshu, made from only natural ingredients.

What is Umeshu

Choya is a brand that produces many liquors, the most famous one being their liqueur based on the fruit of the Ume plum family. The fruit is covered with sugar and poured over alcohol, often Sh?ch? (about 36-45% alcohol content) and macerated in this way for some time.

It takes at least one year to produce Choya Umeshu. This careful aging ensures that the necessary ingredients can be fully extracted from the Ume fruit. The slow aging process produces authentic "plum wine" with the best possible flavor and aroma every time.

Japan has four distinct seasons, each of which is essential for a bountiful harvest of Ume fruit. CHOYA does not use any artificial additives such as acidifiers, flavors or dyes in its products.

CHOYA uses only a few varieties of Japanese Ume out of the several hundred that exist in Japan today. Nanko-ume from Wakayama is the highest quality variety with plump flesh and high acidity, making it particularly suitable for Umeshu production.

Ume is not a plum?

Ume (scientific name: Prunus mume Sieb. et Zucc.) is often confused with plum (scientific name: Prunus domestica L.), which belongs to the same group, namely Rosaceae Prunus. However, the two fruits have very different characteristics. The acid content of Ume fruit is 4-5%, compared to the 1-2% acidity found in the traditional plum. The flesh and skin contain polyphenol(a type of antioxidant compound found in plants), the amount of which increases as the fruit matures. In addition, the fruit contains many amino acids and other organic acids, such as citric acid.

Choya wine has many health properties. It cleanses the body of toxins, removes fatigue and fights insomnia. It is considered a treasure of the Cherry Blossom country. It is rich in vitamin C and fruit acids. There have been many medicinal uses for Ume throughout Japanese and Chinese history. There is a proverb in Japan that says Ume can kill three types of poisons: those contained in food, water and blood.

Types and prices of Choya wines

The most common types of Choya wine on our market include:

  • Choya Silver - sweet with velvety aroma of Ume fruit, amber color, often served with Asian dishes. In the taste we find a plum and apricot flavor, broken by the acidity of apple. Silver version is the cheapest, the cost of a 0.5 liter bottle is around PLN 20.
  • Choya Original - definitely more essential than the Silver version with a characteristic sweet and sour taste. The price of a 0.5 l bottle is in the region of 35 zł.
  • Choya Silver Red - a pink version of Choya Silver, a sweet Japanese wine made from Japanese Ume fruit, sugar, Japanese Sh?ch? vodka with the addition of shiso leaves, which give it its pink color. The price is at the level of PLN 30.
  • Choya Dry - is a dry version of Japanese Umeshu wine, added to drinks or with the addition of ice cubes. The price of this version is around 45 zł
  • Choya Sake - a sweet rice wine with aromas of sweet white fruits and yeast cake, the alcohol content is 15%, the price of this item is around 40 zł. This type of rice wine is served warm

What to serve Choya wine with

Choya wine is sure to appeal to lovers of sweet and semi-sweet wines, it is delicate, light, aromatic and velvety, the alcohol content is low, at 10%.

It goes well with desserts and various sweets. It can be served at room temperature, then the sweetness will be pronounced, slightly broken by the acidity of the fruit.

It tastes good chilled with the addition of ice cubes, then the sweetness is not so intense. Excellent with fish, seafood, shusi ideal as an aperitif and as an accompaniment to cocktails and desserts.
