Pairing wine with fishThere are

various speculations about pairing wine with fish and seafood. Usually the wine for fish and seafood is white, but we can break down the choice based on the division of fish groups, where red wine will also find its place:
  1. Lean fish with light structure - sea bass tilapia, flounder
  2. Fish with medium structure - trout, hake, halibut, cod
  3. Fleshy fish - tuna, swordfish, salmon, mackerel, monkfish
  4. Intensely flavored fish - these are usually fatty fish with an intense aroma during cooking - sardines, halibut, herring, mackerel
  5. Fish with medium texture - trout, hake, halibut, cod
For lean fish, we recommend serving dry wine. In particular, note that wines for fish in group one should be distinguished by high minerality. Examples include Albarino, Verdejo, Chardonnay but without the use of barrel, and delicate Italian Pinot Grigio.

Winefor fish with medium structure should be richer. Such a bottle will also cope with the accompaniment of sauce. Wine for fish with a fuller structure, which will perfectly complement its qualities, for example, Sauvignon Blanc from New Zealand, French Chardonnay or dry wine Chenin Blanc From South Africa.

Red wine will work well in the company of fleshy fish. This is a fish that resembles a steak in its structure, so we suggest pairing it with a rosé or even a red wine that does not contain a lot of tannins, but will be light, harmonizing well with the structure of the fish meat. Of white and rosé wines, we recommend already barrel-aged Chardonney, Viognier, white Burgundies, Spanish rosé wines or Grenache Blanc. Red wine for fish in this group is, for example, Pinot Noir or Cannonau di Sargegna.

For fish with intense aroma or flavor, such as anchovies which we mainly use in salad dressings or on pizza, you can serve white wine for fish in a sparkling version or red wine. for fish is not only a division due to its texture, but also additives in the form of sauces:
  • Wine for fish with a sauce based on lemons, lime and vinegar: the classic Beurre Blanc. We can combine with wines with more herbal and spicy flavors such as Sauvignon Blanc, Vino Verde, Verdejo, Muscadet.
  • Wine for fish with spicy sauces - fish that is well seasoned with pepper, chili, coriander can be paired with wines such as Grűner Veltiner, Gewűrztraminer, Riesling, and a red wine such as Grenache will also prove to be a good partner.
  • Wine for fish with sauces from Asian or Indian cuisine - these sauces are very aromatic and sometimes sweet, and because of their spices, combine with sweet, semi-sweet wines: Moscato, Gewűrztraminer, Prosecco or Riesling.
  • Wines for fish with a sauce based on fresh herbs (mint, basil, parsley, capers, thyme) - try to choose wines that will be rich in aromas of flowers and herbs - Sauvignon Blanc, Chablis, Grenache Blanc, Trebbiano or floral Argentine Torrontes.
  • Wines for smoked fish or Seviche - Smoked fish are usually slightly dry and need wines that quench thirst. Pair such fish with Champagne from an older vintage, pink sparkling wines, dry Riesling, Albarino.
  • Wine for rawfish (Sushi) boldly combine with sparkling wines and dry white wines - Vino Verde, Albarino, Muscadet or plum wine " Choya"
