What is Tokaj wine like?

Tokaj wine is primarily known for producing sweet wines, especially the famous Tokaji Aszú, which is one of the most valuable wines in the world. Tokaj is primarily a white wine, made from local grape varieties such as Furmint, Hárslevelű and Sárga Muskotály (Muscat). These are strains that are resistant to local climatic conditions and are ideal for producing both dry and sweet wines.

How is Tokaj wine made?

The production of Tokaj wine, especially Tokaji Aszú, is a complex and time-consuming process. A key moment in the production of this wine is the occurrence of a phenomenon called "noble mold," or Botrytis cinerea, which attacks grape clusters. This mold causes the grapes to lose water and concentrate their sugars and flavors in the fruit.

The harvested Aszú grapes are then hand-selected, and the selected grapes go into a vat where they are macerated along with the base wine. The more grapes that are added to the wine, the sweeter and more intense the final product will be. After fermentation, Tokaj is aged in cellars in barrels, often for many years, which gives it depth and unique character.

In addition to sweet Tokaji Aszú, the Tokaj region also produces dry and semi-dry wines, which, although less well-known internationally, are also highly regarded for their freshness and elegance.

Is Tokaj sweet?

Tokaj is primarily associated with sweet wines, however, not every wine from the Tokaj region is sweet. The famous Tokaji Aszú is a dessert wine with a high sugar content that delights with its richness of flavors and aromas. It is available in different levels of sweetness, which means that you can find both sweeter and less sweet versions of this wine.

The level of sweetness in Aszú wine is determined by the number of puttons (discussed in more detail below), and the sweetest wines can have as much as 150 grams of sugar per liter. Tokaj also produces semi-sweet, semi-dry and even dry wines, which are characterized by freshness and pronounced acidity. Especially dry Tokaj Furmint is prized by connoisseurs for its minerality and elegance.

How do you drink Tokaj?

Tokaj wine, especially sweet wines, is best served slightly chilled, at a temperature of about 10-12°C, which allows the full aromas and flavors to come out. Sweet variants are perfect as a dessert wine, served at the end of a meal, accompanied by blue cheese, foie gras, as well as dried fruits and nuts. They can also be served with desserts, such as fruit-based cakes, tarts or cheesecakes.

Dry wines from the Tokaj region, such as Tokaji Furmint, can be served as an aperitif or as an accompaniment to light dishes such as fish, seafood or salads. Thanks to their high acidity, dry Tokaji are a great choice for dishes with more delicate flavors.

What does 6 puttons mean on Tokaj wine?

The term "puttons" refers to the number of baskets of Aszú grapes that were added to the base wine during the production process. Traditionally, one basket of such grapes (called "puttons") weighed about 20-25 kilograms, and they were added to a barrel containing 136 liters of wine. The more puttons, the sweeter and more intense the wine.

Tokaji wine with 6 puttons is the sweetest and most concentrated, with intense aromas of dried fruits, honey, spices and flowers. It is a wine of exceptional complexity and a long finish, which is often considered the best and most luxurious product from the Tokaj region. Wines with fewer puttons, such as 3 or 5, will be less sweet, but will still retain their characteristic rich tasting notes.
