Savignon Blanc wines are usually drunk young, because of their freshness and crispness. However, you can find steadier wines aged on the lees in barrel or vat. The aromas of such wines are richer, there are notes of oak, a hint of vanilla, cream, butter, and the acidity is minimally lower

.History of the grapeSavignon

Blanc is a strain of white grapes, originating in France and cultivated since the Middle Ages. The name is derived from the French words sauvage (wild) and blanc (white), which refer to the wild-growing vines of this variety. At the moment, its production has spread almost all over the world, and expansion is increasing all the time. The main areas of cultivation are, of course, France - the Loire Valley or Bordeaux. Savignon is also the second white grape variety grown in the Languedoc. It is also found in New Zealand, where the cultivation area has increased by 10,000 hectares in the last thirty years and is still growing! Other important areas where Savignon Blanc is grown are Chile, South Africa, Australia and California

.Growing the grapeSavignon

blanc is easy to grow and resistant to mildew. However, it remains susceptible to gray mold and fungal diseases. It gives a fairly regular yield. It adapts well in different environments, which explains its worldwide expansion. It is also worth noting that it does not like too high a temperature

.Combining with other varietalsOn the

Vineyard.com portal you can find many wines in which the Savignon Blanc varietal appears solo. However, it seems that the most outstanding wines are made when Savignon Blanc is combined with another varietal. One of these, of course, is Semmilion - together they make a Bordeaux classic. An example is the wonderful, long-lived wines from Pessac-Léognan, combining the acidity brought by Savignon with the velvety and sweetness of Semmilion. The well-known wines from Sauternes are made from a blend of Savignon Blanc, Semmilion and Muscadelle varietals. It is also becoming increasingly common to combine Savignon Blanc with Chardonnay-such wines can be found in Gascony and Languedoc, Italy, as well as in the New World (Australia and Chile)

the outset, it should be mentioned how gastronomically versatile this varietal is. Savignon wine will be perfect as an aperitif, will emphasize the taste of light salads rich in fresh herbs, and will form a great duo with vinaigrette dressing.
