Did you know that Porto was created by accident?

If it weren't for England's years-long conflict with France, we might not have fortified wine from Portugal today at all. As a result of the Centennial War, Britain began importing the liquor from the Douro instead of from Bordeaux. Unfortunately, the wine took the long sea voyage badly. It succumbed to excessive fermentation and spoiled. It was then that a strong alcohol - brandy - was added to the wine. This stopped the fermentation process. This unusual idea was the beginning for today's popular fortified wine - Porto. Nearly 100 grape varieties are allowed for its production, but the most commonly used are: Touriga Nacional, Touriga Franca, Tinta Barroca, Tinta Cão, Tinta Roriz. When the fruit undergoes fermentation and the grape juice reaches about 7% alcohol, brandy is added.

Types of fortified wines

Porto is made in Portugal. It can be red and white, sweet and dry. They can also be distinguished by the method of aging. If it took place in barrel, we have cask aged port, and if in bottle - bottle aged port. These two types are then divided into further types. Hence, on bottles there are terms such as Ruby (basic port, aged in barrel), Tawny (longer kept in barrel than Ruby, usually a bit dryer) or Late Botteled Vintage Port (aged in bottle, from a single vintage), among others. The most common fortified wine in Poland is precisely Port, hence you can find a lot of interesting proposals on Vinaya. Bottle costs can definitely vary. They start at PLN 69.99 and can exceed even PLN 400. The price depends primarily on the length of aging in the barrel. Another popular fortified wine is sherry. It has nothing to do with the cherry fruit, which is similarly sounded in English: cherry. The wine gets its name from the place where it is produced, the Jerez region of Spain. It is created in a similar way to Porto, by adding brandy to the wine. Three varietals are mainly used to make sherry: palomino, pedro ximenez and moscatel romano. In the case of this wine, you can meet with such types as: Fino - this is the driest version of sherry, then the slightly darker and sweeter Oloroso sherry, and the sweetest is Pedro Ximenez.

Madeira takes its name from the Portuguese island of the same name. The production of this wine is somewhat different from that of port and sherry. Here the fermentation process is interrupted with strong alcohol, and then the wine is heated. This gives it additional flavors like caramel, nuts and spices. This production process, called Madeiraization, makes it one of the more durable spirits. This fortified wine has a reputation for being able to be opened, kept for years and won't spoil. There are different types of Madeira - dry (Sercial), semi-sweet (Boal) and decidedly sweet (Malvasia). They are also distinguished by their maturation period. The most popular are 3 and 5 years old. However, there are also some that have matured for 20 years.
