The towering character is the overriding characteristic of raw vegetables, so it is worth reaching for a wine with similar qualities. Refreshing Prosecco-style sparkling wines, expressive Sauvignon Blanc or even young Chardonnay untouched by barrel will be the perfect complement in this case. With a bit of madness, we can also indulge in a dry Rose, which will not be inferior in any way to the other proposals
