Raw vegetables usually tend to be pleasantly crisp, juicy and with pronounced acidity. The towering character is the overriding characteristic of raw vegetables, so it is worth reaching for a wine with similar qualities. Refreshing Prosecco-style sparkling wines, expressive Sauvignon Blanc or even young Chardonnay untouched by barrel will be the perfect complement in this case.
