How are white semi-dry wines made ?

They can be made from both red and white grapes, because white wines are fermented without skins. During the fermentation process, the sugar and yeast from the grape pulp turn into alcohol, and the amount of residual (lees) sugar that remains after the fermentation process determines whether the wine will be semi-dry.

The standard accepted norms are between 4 and 12 g/l, but it is important to remember that many countries have their own standards allowing higher or lower sugar content. A good example is Italian semi-dry primitivo, which can reach as much as 18 grams per liter.
