Style, country, region

Cabernet Franc is a red grape variety proper, originating in Bordeaux in western France. It is a varietal grown all over the world, but mainly from the Bordeaux region and the Loire Valley. Cabernet Franc ripens fairly early. It tolerates cold more than other red varietals, but spring frosts can do it harm. It likes to be grown on rocky and sandy soil. The grapes are small, with a slightly elongated shape. It has a thin skin. This strain is the ancestor of the popular Cabernet Sauvignon and Merlot.

Aroma and taste of Cabernet Franc wine

Cabernet Franc is a wine with a unique and essential flavor. In different climatic conditions it exudes quite different qualities, giving the wine its peculiar character. In colder climates, such as in Canada or the Loire Valley, it will be airier in texture and higher in acidity, while in warmer regions - Tuscany, for example - the wine will have a denser structure. Tuscan wine is characterized by more red and dried fruit aromas.

One of the characteristic notes noticeable in Cabernet Franc are accents of green bell pepper, black bell pepper and nutmeg. Cabernet Franc wines from warm climates can surprise with a very pleasant spicy, essential finish with hints of chocolate with chili. This is due to the presence of aromatic compounds called "pyrazines" in the Cabernet Franc grape, which are a natural defense system against pests.

Cultivation of the Cabernet Franc grape

One of the most famous places to make mono-strain wines from Cabernet Franc is the Loire Valley in France. There, at least in appellations such as Chinon and Haut-Poitou, the wines captivate with aromas of raspberries, red bell pepper or oregano. On the palate it leaves a small amount of tannins and expressive acidity. Because of its distinctive profile, the variety is also very important for the Bordeaux coupage, where wines built on Cabernet Sauvignon and Merlot are "seasoned" with a touch of Cabernet Franc.

Another place where Cabernet Franc plays an important function is Tuscany. However, since in Italy Cabernet Franc is not a permitted varietal among DOCG-grade appellation wines, you will find it above all in the so-called supertoscans, wines classified as IGT, but due to their quality, considered among the best in the region. In the blended wines, thanks to it, notes of sweet cherries, chocolate, green peppers and leather appear. Compared to French wines, we usually find more tannins and a bit more structure.

Very interesting results are also obtained by winemakers planting Cabernet Franc in New World countries. In Chile, the wine exudes a pleasant texture with low acidity and pronounced tannin, enchanting with notes of blackberries, chocolate and pepper, and, in the case of barrel-aged spirits, also a pleasant, sweet vanilla.

Pairing Cabernet Franc wine with food

Cabernet Franc wine has elevated acidity and low tannins will pair well with tomato-based dishes, vinegar-based sauces, BBQ-type dishes such as beef burgers. Because of the herbal accents, pair the wine with dishes with lots of vegetables, e.g. grilled vegetables seasoned with fresh herbs. As for cheeses, feta, goat cheese, brie and blue cheese will be ideal.

Cabernet Franc wine prices

With its versatility and ability to withstand harsh conditions, the price of Cabernet Fran c can range from everyday to completely prestigious. Basic wines for everyday consumption can surprise with fantastic flavor at as little as 40 zlotys per bottle, while top producers using the variety for outstanding wines in Bordeaux, for example, price their bottles at much more, making the final amount dependent on the vintage and final quality.
