Cantina Pellegriono is an exceptional Sicilian wine producer. The company has been in the hands of Sicily's most famous wine family for 7 generations, actively managing it for 135 years. Centuries of tradition and experience mean that Pellegrino's vineyards grow the best Sicilian grapes, which produce excellent wines. The long history of the business has allowed it to explore the secrets of terrior knowledge, methods of cultivating native vines and the best techniques for vinifying grapes. Pellegrino's vineyards are located in the westernmost part of Sicily, which is characterized by: ample sunshine, dry climate, fresh soils, southerly winds and favorable temperatures. These conditions favor the production of high-quality wines including Marsala Fine I.P. The history of Marsala wine coincides with that of the Pellegrino family. In 1880, the winery enclosed to produce wine from the famous Sicilian vines, which can be bought in every corner of the world. Marsala Fine I.P. is a naturally sweet white fortified wine, produced inclusively in Sicily. A very distant relative of sherry, marsala wine has been around since the days when British Admiral Nelson fortified his troops with it. For most of the 20th century it was not very popular, but for some time now Sicilian winemakers including Pellegrino have been giving it a lot of attention. This Italian wine is made from local varietals Inzolia, Cataratto, and Grillo. It is aged in oak barrels for a year. When it comes to maturation, it is worth learning about some important designations that relate to the general category of Marsala wines. There are the following styles of Marsala: marsala gold wine is made from white grapes, amber: is made from white grapes and cooked must, rosso (rubiono) wine: is rare, it is a marsala wine made from at most 30% white grapes. Marsala wine also has different designations due to maturation conditions. The Fine designation defines a marsala wine that is aged for 1 year, such is the case with Pellegrino IP Marsala Fine DOC. You can also find marsala wine with the Superior designation, in which case the wine matures for 2 years. Marsala Superior Reserve wine is aged over 4 years. The Vergin designation says that the Marsala wine has been matured for 5 years and is dry. You can also meet Marsala Vergin dry wine, which is aged for more than 10 years. Marsala wine's taste is pleasant, dense and concentrated with a long finish, in which one senses vanilla and walnut aromas. In addition to aromas of vanilla and walnut, other dominant notes include stewed apricots, tamardin, brown sugar, honey. The Fine I.P DOC marsala wine spent 12 months in barrel hence the barrel aromas appear.

The sweet marsala will work well in sweet sauces for pork and chicken and in desserts like zabayane. It pairs perfectly with any form of chocolate variations.
