Viognier

grape

yields a wine with a complex structure, fleshy and full-bodied. The aromas are dominated by tangerine, peach, mango or rose. In the mouth, it emphasizes an oily texture and expression of fruitiness with low, only gently marked acidity. As the Viognier goes into barrel, it develops additional creaminess and notes of vanilla. It's an excellent alternative to Chardonnay, in a slightly softer, lighter and more aromatic form.

In addition to barrel, winemakers like to subject the wine to the batonnage process, which means regularly stirring the lees during fermentation. This gives even more body and intensity in the end, and further reduces the wine's acidity. Another common phenomenon regarding Viognier, is its occasional coupage with the red Syrah varietal, which is quite surprising in the combination itself. This further cranks up the aromatics and structure of Shiraz-based wines

.Pairing Viognier with a mealWines

from the Viognier varietal, based on its fleshiness and delicate aromas with low acidity, will go perfectly with chicken in a creamy sauce, but also with a roast with apricot or peach. It will also complete its purpose in Asian cuisine. Both curry-based dishes and classic pad thai are suggestions with which Viognier will quickly make friends.

When looking for a combination with fish and seafood, it is worth focusing on meatier choices. Grilled lobster, baked lobster or catfish enjoy just the right texture to perfectly complement the wine's qualities.

When looking to match the right vegetables with a meal that Viognier will enhance, a good idea is to choose roasted yams and spiced potatoes.

Above all, we want to avoid overly acidic elements in a meal, as well as those that are overly dominant aromatically - they could then cover up the bouquet qualities in the wine. When reaching for fuller, more structured dishes, it is worth choosing a bottle of Viognier that has spent some time in barrel. You will then get a better balance based on two well-built elements
