Cultivation characteristicsToday

we can distinguish 22 regions where Hungarian wine is produced. The most popular of these are: Tokaj, Kunság, Csongrád, Eger and Szekszárd. Tokaj, located in the northeastern part of the country, is famous for its sweet, quality Tokaji Aszú wines. It is also the production site of the famous Furmint and Muscat. The Eger region, in the north of the country, produces wines confusingly reminiscent of Burgundian classics. Elegant reds, often labeled Superior, delight with their complex flavor.

TokajDuring

the reign of Louis XIV, it was proclaimed the king of wines. It owes its unique taste and character to the prevailing climate. The vineyards are located on volcanic hills near the confluence of two rivers. In autumn, the resulting mists cause a fungus (Botrytis cinerea), a noble mold that does not damage the skins of the grapes, to accumulate on the grape fruit. It causes a reduction in the water content of the grape and thus increases the sugar level, acidity and multiplicity of flavors. This results in a very sweet Tokaje Aszú that is unique in flavor. The grapes are occupied irregularly and must be harvested by hand under the winemakers' constant control. All this results in very limited production and very high costs. The unpredictability of the weather and the increasingly rare mold have forced producers to produce dry Tokaj.

Therefore, we can distinguish two types of this wine:
  • Tokaj Szamorodni - can be sweet and dry, owes its name to ripening during transport (samorodni), the strength of sweetness depends on the degree of maturity of the grapes.
  • Tokaj Aszú - means "dried", its production is very time-consuming and burdened with many requirements. The harvest is in late October, sometimes extending even into December. Grapes affected by noble mold become overripe and dried. The crushed grapes are flooded with sweet wine and fermented. The maturation process is usually 4 years. Its sweetness depends on the number of putons (crushed grape parcels) used per barrel. The least sweet have a content of 3 putons, the sweetest 6. The wine has a velvety taste with very intense aromas of honey and nuts.

Recommended winesGood wines

from Hungary do not have to be expensive. Their prices start as low as PLN 30 for a bottle of Furmint and go up to collector's Aszú tokens for several thousand zlotys. At Winezja.pl, Hungarian wines are mainly Tokaj, and of particular note is Tokaj producer Oremus Kft, whose wines can age for many years. For this reason, we recommend them as a christening gift wine. The gift will be able to wait 18 years without worrying that it will spoil. Hungarian wines go well with classic Polish cuisine (fish, pierogi, meats). Sweeter liquors will do very well with spicier flavors or sheep's cheese.
