Grillo is a white grape variety with green-yellowish fruit. The name of this strain means "grasshopper". The vine grows luxuriantly and is very fruitful. It is a variety that originated in Italy, the first references are from 1873. It is a natural hybrid of two strains such as catarrato bianco and muscat of alexandria (zibibbo), this has been confirmed by DNA marker tests. What has not been confirmed, contrary to earlier speculation, is that Grillo was imported from Puglia to Sicily in the 19th century. In Italy, different names are used for this strain: ariddu, riddu, rossese bianco. The Grillo strain is the most popular of the white strains in Sicily. It is common to find couplets of Grillo with the varieties inzolia and catarratto bianco, and even the world-famous chardonnay. A distinctive wine for Sicily is also used to make marsala. Marsala is usually a white sweet fortified wine with intense flavor and aroma. There are also red, dry and even semi-dry versions. Of interest, Marsala is served as an aperitif, also as a dessert wine

Sicily, the climate varies, with winter temperatures dropping to around 4°C and summer temperatures exceeding 40°C. Spring and autumn are warm. If it rains it is mainly in autumn and winter. Grillo, as well as some strains is susceptible to a disease called powdery mildew, a fungal disease of the plant, on the leaves then appears a white coating which causes later in the wines a bad smell and taste. The grapes of this grape ripen moderately late and are resistant to low temperatures in winter

is a good addition to everyday meals as well as parties. Dry wines will pair well with seafood, fish or some grilled dishes. It will certainly pair well with vegetable dishes because of its character.

Dessert wines, such as Marsala, are paired with cream-based desserts, cookies that contain almonds, or mature cheeses. Italians use Marsala for a dessert called "Zabaglione" it is a dessert based on steamed egg yolks with sugar with the addition of this aromatic wine. Marsala used to be a typical gastronomic wine, but over time it has also found fans of fortified wines
