Although it is the dominant grape among wines, especially around Valpolicella, it is most often found in a coupage, albeit with Rondinella, Molinara or Corvinone. It excels at drying the fruit in the method known as appassimento, which produces the legendary Amarone wines

.Characteristics of the Corvina gra

peThe Corvina grape, also known as Corvina Veronese, by default provides the wine with a light structure, pronounced acidity, low tannins and a dark color in the glass. The characteristic aromatic note for this grape is cherry. To give more complexity to the wine and develop its structure, winemakers used to use oak barrels in the maturation process. Interestingly, although the Corvina and Corvinone strains sound similar, the former is much closer in terms of DNA to another variety grown in the Veneto - to Rondinella. In tandem with it, they form some of the best Italian wines in the Valpolicelli area

.The most important wines from CorvinaWines

from Valpolicelli have become world famous thanks to their quality and individual character. The real jewel in the crown of these wines is the famous Amarone della Valpolicella, which is made from a couplet of Covina, Rondinella and Molinara grapes, after the harvested fruit goes through a drying process of several months to form raisins - called appassimento in Italy. As a result, the grapes lose a significant amount of water, and this results in a higher concentration of sugars and aromatic compounds. After the fermentation process the wine is aged for a minimum of two years in oak barrels. All this makes the final result a powerful, extremely complex and dignified wine, suitable for many years of maturation in the cellar. Thus, it is regarded as one of the best wines in Italy.

However, it is not the legendary labels alone that Valpolicella lives by. Their basic wines can bring a lot of joy and pleasure to the tasting, delighting with expressive fruit and juicy, balanced body. Also popular is the method of using must left over from the production of Amarone during the fermentation of traditional Valpolicella. The result is a slightly more complex and extremely interesting wine at an affordable price, which is known as Valpolicella Ripasso.

Wines bearing the Valpolicella DOC appellation must contain a minimum of 45% of the Corvina varietal, with a maximum of 90% of this variety. The appellation rules thus define the fact that Valpolicella appellation wines are a coupage with other local varietals. Thus, mono-strain wines made from 100% Corvina, however, are less common, usually being everyday, yet still very good wines

.Pairing wines from the Corvina varietal with foodThe simpler

Corvina wine or basic Valpolicella can be confidently paired with grilled vegetables, fattier fish, white meat or more delicate reds. More mature wines - such as ripasso or Amarone, will go well with red meats, barbecue, beef steak or bolognese-style pasta.
