, which is particularly fond of cool climates, so the regions of Rias Baixas located just above the Atlantic fit in perfectly. Simultaneous temperatures and sunshine allow the grape to reach full maturity. The skin of the grape in this case is thin and the berry is relatively small, making cultivation difficult and troublesome. The vines are prone to mold and rapid rotting, which challenges the winemaker to perfectly control the moisture over the parcels.

The impact of this coolness and proximity to the ocean has a direct bearing on the taste qualities we will experience when tasting bottles from this region. Albarino wine is characterized by fresh aromas of lemon zest, nectarine, melon or grapefruit. There is also a slight salty minerality on the tip of the tongue. In the mouth, on the other hand, the character of oceanic expression is maintained, dominated by fresh, chewy fruit, topped with pleasant, refreshing acidity.

Although Albarino is used to drinking young, the grape itself has unusually high - for white wines - aging potential. Resting in our cellar, the wine will acquire a lot of maturity, elegance, waxy aromas. Interestingly, the vine itself is also very durable and long-lived. The oldest Albarino vines are as old as 300 years

The salty nature of the wine also encourages the use of flaky salty cheeses such as parmiggiano reggiano on served salads.
