Interestingly and significantly, armagnac has not been absorbed by corporations like champagne or cognac. Small wineries continue to produce armagnac, which is of high quality. Armagnac has 3 appellations: Tenereze, Bas-Armagnac and Haut-Armagnac.

The most important varietals from which Armaniak is produced are:
  • Ugni Blanc
  • Folle blanche
  • Colombard
  • Baco blanc

How is Arm

aniak made

?

Armaniak is made from white wine of fairly high acidity with an alcohol content of 7-12%. Unlike cognac, Armaniak is distilled only once, and distillation must be completed by March 31 of the year following the grape harvest.

Aging of ArmaniakThe resulting

spirit (eau-de-vie in French) is aged after distillation in new French oak barrels for about two years. After aging in new barrels, the Armaniak is transferred to older barrels so that the spirit does not have too intense wood aromas.

Aeration during agingMost

Armaniak producers aerate the alcohol by transferring it from the barrel to a vat, and then the vat is returned to the barrel. This process helps to mellow and develop the flavor.

Blending ArmagnacBases

from different varietals are aged into Armagnac separately, and the Master Blender decides when the liquor reaches the ideal aging point. Later, the different vintages are blended together - this process is called coupage. If the alcohol percentage exceeds 40%, distilled water is sometimes added to lower the alcohol content. Some Armagnacs are a combination of several vintages. During blending, additives permitted by the regulations are used to enhance flavor, color and aroma:
  • Water - for dilution
  • Sugar syrup - for sweetness
  • Caramel - for texture and color
  • Boise - enhances the ageing characteristics of armagnac
Markings on the bottle:
  • VS - from 1 to 3 years
  • VSOP - from 4 to 5 years
  • Napoleon - from 6 to 9 years
  • XO - 6 years (before 20218) and 10 years (after 2018)
  • Horse d'age - more than 10 years
  • Vintage - aged min. 10 years and the date is the year's grape harvest

Characteristics of armagnac:

The style and taste of armagnac depends on many aspects - the grapes used, the choice of barrels during aging and many others. Among the important aspects that characterize Armagnac we can distinguish:

Color - depends on how long it is aged in a barrel. The longer the alcohol is aged, the darker the color it takes on, acquiring a caramel hue.

Aroma - it should be remembered that the first dipping of the nose into the glass is alcohol, only after a while will you smell subtle aromas of vanilla, roasted nuts and a drip of dried dark fruits.

Taste - you can usually sense dried plums, orange peel, apricots, spices and caramel and coffee
