The ruby-coloredCabernet Savignon wine is a cross between two French varietals - hence its name. The expression Cabernet comes from the red Cabernet Franc, while the second part of the name, or "Savignon," comes up from the white Savignon Blanc strain. That's the whole mystery. It is worth mentioning, however, that genetic studies confirming the origin of Cabernet Savignon wine only appeared in 1996.

Wines from the Cabernet Sauvignon strain

Dry Cabernet Sauvignon wines are well-structured, aromatic, fleshy and intense. This is due to the distinctive thick skins on the grapes and large seeds characteristic of this grape. This combination gives Cabernet Sauvignon wine very high extractivity and high tannin content. For this reason, it is often combined with other varietals (including Cabernet Franc, Pinot Noir, Tempranillo or Petit Verdot) to soften the taste of the wine. An excellent red wine from the Cabernet Savignon varietal, it is famous for its deep purple color and high aging potential.

Aroma and taste of Cabernet Sauvignon wine

Cabernet Savignon varietals usually produce dry wines. They are characterized by an easily perceptible aroma of black currant. You can also recognize the taste of violets, blackberry and allspice. The Cabernet Sauvignon grape grown in cooler climates gives a concentration of aromas of cut grass, green peppers, leaves and green bell pepper (but also the aforementioned black currant). Cultivation from New Winds gives the wine additional chocolate flavor, and in Australian Cabernet Sauvignon we can even sense eucalyptus. If the wine is initially aged in oak barrels, it can acquire aromas of vanilla, coconut and smoke, which over time transform into cedar, fine tobacco, musk, earth, leather or mushrooms.

Cabernet Sauvignon wine - price

The price of Cabernet Sauvignon wine depends on many factors. A significant influence is the country of origin of the wine, whether it was aged in a barrel, in which appellation it was made and the volume of wine production. However, it is worth mentioning that Cabernet Savignon wines can be found at a very good price, and it is not always the price of a wine that indicates the quality (although it often does). I recommend trying Cabernet Savignon wines from different price shelves and comparing them according to your own preferences.

Pairing Cabernet Sauvignon wine with dishes

Red wine from the Cabernet Sauvignon varietal will conquer the taste of many dishes. Due to its high tannin content, it is especially recommended to combine with juicy dishes, such as blood steak. Cabernet Sauvignon wine then gives the impression of being smoother and fruitier.

Powerful and heavy wine from the Cabernet Sauvignon varietal (high tannin content) is best served with red meat, i.e. beef, lamb, game, wild fowl - as well as with heavy Italian dishes, such as lasagne or pizza with lots of cheese. Cabernet Sauvignon will also pair well with mature cheeses, black olive salad or desserts with dark chocolate. It also goes well with cured meats.
