Wine Zensa Nero d'Avola Appassimento Organic DOP Sicilia

The wine is made from 100% Nero D'Avola grape. The fruit is sourced from fully organic vineyards in the province of Trapani, Sicily. The plants are on average 20-35 years old and the planting density is 4,500 plants per hectare. 20% of the grapes are harvested by hand in mid-September. They are placed in small boxes in attics for 10-15 days to dry the fruit naturally. 80% of the grapes wait another 10-15 days or so for later harvesting and then both parts are vinified together. During this process the stalks are removed but the fruit is not crushed. The skin remains intact which results in an intense color. Fermentation takes place at a controlled temperature of 23˚C-25˚C for 8-10 days.

Zensa Nero D'Avola Appassimento is a red wine with an intense and rich bouquet of fruits such as cherries, black currant and plums. In the mouth it is quite intense, tannic and powerful with a velvety and long finish.
