Origin of the strain SaperaviIt origin

ated in Meskhetia, located in southwestern Georgia ( many people believe that Saperavi originated in Kakhetia, because today it is most widespread there), near the border with Turkey. From there, the variety spread first to Kartlia and then to other regions of Georgia. This thesis is confirmed by modern genetic studies, which have shown that the closest known relatives of modern cultivated saperavi vines are the wild vines found in the Kury (Mtkvari) River valley in Meschetia. Morphologically, too, saperavi is more similar to indigenous varieties from western Georgia than vines from the eastern part of the country. Surprisingly, Saperavi on a larger scale has only recently been cultivated in Georgia. As recently as 2004, cultivation of the variety occupied just 3704 hectares in all of Georgia, representing less than ten percent of the total area of vineyards there. Of this, only 2801 more hectares were under cultivation. This situation was due to the prevailing culture-no red wine was drunk in Georgia, and almost all wines of this color were transferred to foreign markets. Fortunately, Saperavi perfectly fits the tastes of consumers around the world, so that in recent years the cultivation area of this grape has increased to 7-8 thousand hectares. The largest plantations of Saperavi are in Kakheti, but sizable crops are also found in Kartlia, Imeretia and Rača, where the strain occupies a total of several hundred hectares. As early as the mid-19th century, saperavi was also grown in other countries, first in various regions in the south of what was then Russia. Today, plantations of this strain can be found in Ukraine - about 1,500 hectares, Moldova - about 900 hectares and southern Russia - about 700 hectares. Saperavi is also successfully grown in Azerbaijan, Bulgaria, Armenia, Romania, as well as in the USA (in the Finger Lakes in New York State) and Australia (for example, King Valley in Victoria, in Barosa and McLaren Vale in South Australia)

in so many countries is due to the fact that the bushes are characterized by moderately strong growth and do not start growing too early, so they are not affected by spring frosts. It is a relatively late variety and requires quite a lot of heat to reach full fruit maturity. The wines made from Saperavi in cooler regions are distinguished by extremely intense acidity and aromas of green vegetables. And this is one of the most important advantages of this variety - it allows to obtain high-end wines in a variety of styles. They are characterized by a dark, deep color, pronounced acidity, full body, a considerable amount of tannins. A typical Saperavi is very aromatic, standing out mainly accents of dark fruits- cherries with stone, cherries, dark plums, blackberries, as well as chocolate, coffee, spices and leather. Wines from Saperavi have great aging potential-they can mature in bottles for up to several decades and are among the most long-lived red wines in the world.
