Definition of dry wine

According to the grammage, it can be determined that dry wine should contain less than 10g of sugar. At this point we can refer to Commission Regulation (we) No. 607/2009 of July 14, 2009 laying down certain detailed rules for the implementation of Council Regulation (EC) No. 479/2008 as regards protected designations of origin and geographical indications, traditional terms, labelling and presentation of certain wine sector products we can find a regulation that defines dry wine as: "Wine in which the amount of sugar does not exceed 4 grams per liter or 9 grams per liter, while meeting the condition that the total acidity expressed in grams of tartaric acid per liter is not more than 2 grams below the residual sugar content."

Wine titrability is not just about determining the amount of sugar. Also important is the acidity of the wine and also the tannicity, which we can only find among red wines. Tannins are compounds in wine that cause a dry mouthfeel. They come from grape skins and seeds and also from new oak barrels.

How are spumante wines made?

The bubbles in the wine can be created by the classic, or Champagne, method or by the Charmat method. In both cases there is a double fermentation. However, in the case of the Champagne method - it occurs in bottles, in the case of Charmat - in large tanks, and only when the wine is ready, under pressure, it is poured into bottles. Bubbles are created as a result of this secondary fermentation. It occurs under the influence of yeast and sugar, which are added to the base wine. Then, in addition to alcohol, carbon dioxide appears in the wine. In the case of the classic (Champagne) method, the wine should mature on the lees for another 9 months (if it is Spanish cava) or 15 months (in the case of Champagne). Production of sparkling wine using the Charmat method is much faster, which also makes it much cheaper. It also makes the wines fruitier and fresher than the Champagne method of bubbly production.

What are spumante wines?

Most people associate the term spumante with prosecco. And indeed this wine is quite rare in the frizzante version. Prosecco is an Italian wine originating from the Veneto region. which was originally known only in the still version! The bubbles we know and love so much today did not appear until the 19th century. Today it is the most popular wine for summer - for refreshment, but also for various celebrations - for toasts. Its big advantage over champagne is its lower price and pleasant fruity character. But spumante is also other types of bubbly, such as Franciacorta. It is also a sparkling wine from Italy, often compared to champagne, made in Lombardy near the city of Brescia. Like champagne, it is made from three varieties: chardonnay, pinot noir and pinot blanc. Franciacorta is produced using the Champagne method, although its producers prefer to use the term "metodo franciacorta." The wine must be aged on the lees for at least 18 months, which is 3 months longer than champagne.
