How sweet white wine is made

We can call a wine sweet when the level of unfermented residual sugar exceeds 45 g/l. Often the region where such wine is made is characterized by the typical method of making sweet white wine, and the varietals used for production can be really many. The Italians specialize in the method of drying the grapes, the Portuguese and Spaniards are famous for their fortified wines, while the French are associated with late harvesting, waiting until the grapes have dried on the vines, almost turning into raisins. The Germans and Austrians specialize in the currently fashionable method of freezing grapes (ice wines).

The Hungarian white sweet wines of Tokaj, known to all, are made using the method of botrytization, which is the late harvesting of grapes that are covered with a noble mold. This not only allows the grapes to get rid of water, but, more importantly, adds unusual flavors.

Regardless of the method of production of sweet white wine, it should be noted that a good sweet white wine is not only the right sugar content, but also very important acidity. For this reason, not all grape varieties are suitable for the production of this type of wine.

The most popular varietals used in the production of white sweet wines

  • Semillion - the most important variety in the coupage of sweet wines of the Sauternes type made in several appellations in the Bordeaux region
  • Furmint - a local white varietal of Hungary, is the main ingredient in the famous sweet liqueur white wines of Ashu. It is characterized by a spicy-vanilla flavor and a dark amber color. 70% of the crop is Hungarian, but it is also found in Austria, Slovakia, Germany.
  • Grillo - a variety native to Italy, it is one of the basic strains in Sicily. In a coupage with the Cattaratto variety, it is used to make Marsala wine.
  • Muscat - the definite king of sweet wines, under its name there are about 150 different varieties (modern most famous Muscat of Alexandria, Muscat Giallo, Muscat Ottonel) known since ancient times. The most famous Muscat blanc is Moscato d'Asti from Piedmont in northern Italy
  • Riesling - the flagship varietal used to produce the famous sweet ice wines. Germany remains the leader in the production of this type of wine, but these wines are becoming increasingly popular in Austria, where, in addition to Riesling, the Gruner Veltliner variety is also used to make ice wines. Wines from the Riesling varietal, especially from grapes covered with noble mold, yield the most famous and some of the most expensive wines in the world from Egon Muller's Moselle River

With which dishes to combine sweet white wines

Sweet wines make up only a fraction of the world's total wines. Although it is difficult to find gourmet sweet white wine who will reach for another after the first glass, it is often a companion to sweet dishes or is already a dessert on its own. The basic rule is that wine for dessert should be at least as sweet as the dessert itself, so as not to give the impression that it is too acidic. Sweet white wines go well with desserts with whipped cream, creams, as well as white chocolate. They go well with fruit, ice cream and desserts based on nuts, caramel and nuts.

However, sweet wines are served not only with desserts. For example, sweet Rieslings pair well with spicy and savory dishes, especially Thai and Indian cuisine, and sweet Marsala will go well with sweet sauces for pork and chicken. White sweet wines are also served with some fish and goose livers.

In this category, quality or high-end wines make up a very significant part of the total. Outstanding examples of them such as Sauternes, Trockenbeerenauslese, Tokaj Aszu, Eszenica, Vintage Port, sweet Madeira and Sherry are the most outstanding wines, often overlooked and underestimated due to their high price or nature.
