Chablis is the northernmost region in Burgundy. Thus, it is a region with a cold climate, where winters are really cold and spring frosts pose a serious threat. Admittedly, winemakers are getting better at dealing with frosts, by heating plants with stoves or spraying buds with water, but making Chablis wine requires great craftsmanship.

What makes Chablis wine unique?

Chablis is a wine made from only one varietal - Chardonnay, which thrives on local limestone and clay soils overflowing with fossilized oysters (hence the frequent motif on labels). This is not an American-style Chardonnay, as producers are very careful and rarely use barrel. In Chablis, the soil and its quality make a fundamental difference from bottle to bottle. Depending on the soil and the orientation of the slope on which the vineyard is located, we distinguish four appellations in Chablis.

Petit Chablis

It accounts for about 20% of the region, and the taste of wine from Petit Chablis is fresh, floral and citrusy, slightly mineral. The wine from Petit Chablis is simpler to drink young, and its price is in excellent proportion to its quality.

Chablis

Wine from Chablis is much more popular. This appellation accounts for 60% of the entire region. Chablis is a more concentrated wine, feeling more fruit and minerality, which enhances the refreshing character of Chablis wine.

Chablis Premier Cru

Only 40 plots (known as Climats) have earned this prestigious status. Most of the vineyards are located on the southeastern slopes of the hills, making Chablis Premier Cru wine more mature in flavor, which is fruity-mineral at first, but with time subtle notes of flowers develop. If the producer chooses to use barrel, we can expect only subtle oak notes. Chablis Premier Cru is an extremely lively wine, it can mature for up to 10 years, and should only be consumed after 2-3 years in bottle.

Chablis Grand Cru

This is the term for Chablis wines from seven of the most elite of the parcels(Grand Cru), located on the southwestern slopes of the hills, with the highest quality soils and most sunshine, but also the highest price. These wines are powerful, with intense notes of minerals, but also white flowers, honey and almonds. They are suitable for aging for 10, 15 or even 20 years!

Chablis is a unique wine, thanks to the producers' commitment to local Chardonnay expression and centuries-old traditions. Few wines capture the essence of the terroir as well as Chablis.

Which Chablis wine to choose?

The price of Chablis is characterized by a wide range. For dinner with seafood, light meats or fish, the basic Petit Chablis and Chablis appellations will be perfect, with their taste as well as their price. For a gift or a party, it is worth choosing Chablis Premier Cru, which will delight with its complexity. For aging, on the other hand, a Chablis from one of the 7 Grand Cru appellations will be best suited.
