The dry prosecco adds character, while the sweet white peaches allow you to enjoy the sweetness and fruity flavor. Also noticeable on the palate are passion fruit, apricot and nectarine. This is a sweet cocktail, but not in a sweet way and the star is, of course, the peach.

It is perfect as an aperitif, but also makes a very good combination with a light lunch based on spicy food. The fresh taste of sweet white peach balances the spiciness very well. How was the Bellini created?

In 1948, Giuseppe Cipriani, founder of the legendary Harry's Bar in Venice, created the bellini inspired by 15th-century Venetian painter Giovanni Bellini. It was first served at the aforementioned Harry's Bar to celebrate the return to peace, when the world was slowly rediscovering the pleasures of everyday life. The first tasters were Ernest Hemingway and Orson Welles, who (it should be noted) were also regulars at Harry' s Bar.

Throughout the history of Giuseppe Cipriani, carpaccio is also worth mentioning. In 1950, a great retrospective of works by Vittore Carpaccio, the Renaissance painter, was held in Venice. That same autumn, Countess Amalia Nani Mocenigo, came to lunch and reported that her doctor had ordered her to follow a "no cooked meat" diet for several weeks. Giuseppe, always up for a challenge, disappeared into the kitchen and reappeared some time later with something called Carpaccio, i.e. a beautiful display of paper-thin sheets of raw filet mignon with a white sauce. And we don't mention it for no reason, because bellini tastes delicious accompanied by carpaccio. Try it for yourself.

The power of peach closed in a bottle

Giuseppe Cipriani loved white peaches. He began to wonder if there was any way to transform their magical fragrance into a drink he could serve at Harry's Bar. He experimented by making a puree of small white peaches and adding some Prosecco. Those who tested this new concoction gave it rave reviews and he was encouraged to continue his alchemy. In the end, a satisfactory result was achieved. Today the whole thing is encased in a beautiful cracked bottle.

According to the story, it all began at the Hotel Europa in Venice, where Giuseppe was a bartender. One day a young Bostonian named Harry Pickering showed up at the hotel and complained at the bar about financial problems. That's when Giuseppe lent Pickering the money, and two years later Pickering returned to the hotel bar, ordered a drink and, as a token of gratitude, gave Giuseppe back five times the amount borrowed. The money allowed Giuseppe to open the iconic Harry's Bar in Venice, in 1931. It later became a popular spot for many celebrities.

Four generations worked to be an icon. It is an Italian hospitality and leisure company that owns luxury restaurants and clubs around the world, including Harry's Bar in Venice. Obsessive attention to detail and uncompromising quality have led to a luxury brand that now delivers high quality in manufactured food products.
