A typical calvados is a composition of juices obtained from sweet apples (about 30%), sour apples (40%) and bitter apples (30%), but calvados is also produced with the addition of pear juice (it usually accounts for about 15%). The price of calvados is not low, and there is no denying that in this case we are paying for the uniqueness of this liquor, i.e. taste, aroma and time-consuming production.

It is worth knowing that the production of calvados is covered by the AOC appellation, which means that it can only be produced in Normandy in the north of France. However, this interesting liquor is found in different parts of the world under other names: the US - applejack, the UK - apple brandy or cider brandy. The intense bouquet of ripe apples makes it impossible to confuse it with any other distilled alcohol. The younger liquor has a more pronounced apple flavor and a slightly sharp character. As it ages, a noble hint of vanilla appears, and calvados gains smoothness and finesse

.ProductionAfter

a month's vinification of apple must, or cider, an apple wine of 5-6 percent strength is obtained. It is then subjected to distillation, usually twice which must be carried out between October 1 and September 30 of the following year. After this time, a spirit with a strength of 68-72 percent is obtained. The liquor is further transferred to old oak barrels, where it ages for several years and is gradually diluted with water. Eventually, the resulting spirit is a mixture of two or more distillates and water to reduce the alcoholic strength to 40-50 percent. Such a combination is aged for several more months to acquire its final character

is usually served chilled, at 5-6 degrees, but can also be served at room temperature. The traditional glass for serving calvados is a tulip with a lid, but most people drink it in the more popular cognac. Before tasting it, it's a good idea to cover it for a while, so you get all the essence of the drink. Some people appreciate the rich and intense bouquet of young vintages, while others appreciate the mild taste and wonderful aroma that older vintages provide. In the case of young vintages, the color can be bright yellow or straw and golden. Older vintages please the eye with a dark amber hue. In the taste, the perceptible aroma of ripe apples, peach, apricot vanilla, sugar, wood, caramel, tobacco and leather

.Popularity of the liquorCalvados

is valued in France on a par with cognac and treated as a remedy for digestion and to stimulate the appetite. Thus, it is very often served as an aperifil or between meals. In the opinion of our customers, calvados is also an excellent ingredient in cocktails and drinks despite the fact that in Poland it is not very popular, which is a pity, because it certainly deserves attention.
