Wine Zensa Primitivo Organic IGP Puglia

This ruby wine was made entirely from the primitivo grape. Produced from selected and hand-picked grapes from fully organic vineyards in the Salento region of southern Puglia. The density of planted vines is 4,000 plants per hectare. The vines are on average 20 to 35 years old. Manual and very careful harvesting of the fruit takes place in late August. During the vinification process, the stalks are removed, but the fruit is not crushed. This keeps the skins intact which results in color extraction. Fermentation takes place at a controlled temperature of 24˚C-25˚C before about 8-10 days. It contains 14% alcohol in it.

The wine is rich in flavor and all-natural. It has a very intense ruby color and is full of aromas of dark fruits including cherries and berries. In the mouth, we can enjoy a silky texture and an aftertaste of cherries, while notes of chocolate and also vanilla are revealed thanks to aging in American and French oak barrels. The wine has a long-lasting finish that reveals earthy notes.

Zensa Primitivo will work well with tomato-based dishes and also with grilled vegetables, roasted lamb, chicken and all kinds of pastas. It will also be a good accompaniment to cheeses like cheddar or grilled halloumi.
