Canadian winemaking

- icewineAs early as

the 1990s of the previous decade, Canada became famous for its icewines (icewine). Most of the wines of this type come from Ontario, and they are produced in a completely natural way - leaving the fruit on the vine until it freezes. The low temperatures freeze the water and increase the concentration of sugars and aromatic compounds, giving the wine extraordinary intensity and sweetness. The main varieties used to make ice wines in Canada are Vidal, Riesling and Cabernet Franc.

Canada's most important wine regionsMountains

, oceans, lakes and Canada's only classified desert - these aspects unite and at the same time differentiate the climate of British Columbia. This is a region that is famous above all for great quality Chardonnay and Pinot Gris, but also excellent Pinot Noir or Merlot.

Lakes and limestone soils, on the other hand, determine the quality of wines made in Ontario. The gentle breeze from the Great Lakes creates exquisite conditions for growing grapes in the region's cool climate. Noteworthy is the fact that more than 100 wineries are engaged in the production of sparkling wines. Among the dominant varietals in Ontario are Chardonnay, Riesling, Pinot Noir and Cabernet Franc.

In Quebec, both dry, fortified, sparkling and sweet wines are produced, often using hybrid varietals - Frontenac Noir, Blanc and Gris, Vidal, Seyval Blanc and Marquette, although there are also representatives of vitis vinifera. The main production area is concentrated around Montreal and in the vicinity of Quebec City.

Nova Scotia is located between the shores of the Northumberland Strait and the Annapolis Valley. The region is known for producing table and dessert wines, usually based on hybrid varietals such as L'Acadie, Seyval Blanc, Lucy Kuhlman, Leon Millot and Marchal Foch. It's also an area famous for sparkling wines and aromatic white wines.

Did you know that:

- It takes as many as 10 grapes to produce 1ml of icewine!
- Canada is the leading country in the volume production of icewine - one million liters of icewine are produced here annually
- More than 200 wineries across the country produce sparkling wines, much of which is made using the traditional method, maturing for a minimum of 9 months (and sometimes as long as 5 years!) on their own yeast
