The name Cognac is reserved for liquor made only in France, near the town of Cognac. The process of making this liquor has been unchanged for about 300 years, and it is the most famous and elegant cognac. In the past it was also called "eau de vie" which means "water of life." Only 3 strains of white wine are used in the production of cognac, but the most popular is trebbiano. Hennessy is made from 40 distillates aged from 4 to 15 years in barrels that meet very strict conditions.
