Cervaro Castello della Sala - made entirely from fruit from the vineyards of the Castello della Sala estate (85% chardonnay, 15% grechetto). Fermentation and maturation takes about 5 months and takes place in small oak barrels. After this process, the wine gains character by aging for 12 months in bottles, in the cellars of Castello della Sala. Aromas of citrus fruit, pineapple and pear dominate, with a hint of vanilla. A wine with an excellent palette and a long-lasting fruit aftertaste.
